A Talisker whisky & Lot 8 olive oil wash with Lillet blanc vermouth, garnished with sage and served with a ‘tapas’ of a Darjeeling tea marinated fig with apple syrup, Labne & dehydrated sage. (Labne is a Mediterranean style strained yoghurt.)
